All Hail Kale!

My husband is away, so I get to play…with dinner. Usually, our meals together consist of meat and not too much green stuff.  So, my kitchen becomes over run by leafy green vegetables during his business trips. I just can’t help myself at the grocery store, any and ever vegetable becomes an exciting opportunity to try something new. So, tonight I’m going green crazy and making kale cakes! They are chalk full of nutrients and protein. It can be served as the main course with a hearty salad or a fun side dish.

Here’s what you need:

1 medium onion

6 eggs

a pinch of cayenne

one bunch of kale/about 4 cups

tbsp of olive oil

pinch of salt and pepper

Massage kale with about a half tbsp. of olive oil until it’s bright green. I find kale too tough if I don’t do this. Then chop the kale into strips, scramble the eggs, dice the onion, add cayenne, salt and pepper. Mix all the ingredients together. Then add olive oil to a frying pan. Like you are making pancakes add the kale egg mixture in 1/2 cup sizes. Cook until eggs are cooked, then serve hot. It’s not the prettiest dish, but I will say it’s one of the healthier.
