Avocado in your pasta? Avocado Alfredo Sauce!



Dear Diary,

There are endless possibilities with the AVOCADO…those of you who read the SFG blog regularly may be familiar with many of my other avocado recipes (you might call me avocado CRAZY!):  try the sweet and healthy Chocolate mousse, add some avocado to the healthy t-melt wrap, or make good old fashion guacamole (and don’t forget to try another SFG VERSION of the treat…)


This native California fruit is versatile, delicious, and full of crucial vitamins & healthy fats– and with the title of “nature’s butter,” you know you can put it on almost anything… even pasta!

I recently started reading The Kind Diet by Alicia Silverstone.  The book came out years ago, but I’m only just getting hooked.  As a kid, I idolized the actress… her “Clueless” fashion sense kept me workin those knee high tights, chunky platforms and matching plaid dress suits well into my middle school years, but now I look to Alicia for healthy eating tips.  Alicia is a vegan & animal rights activists… and while I doubt I’ll be giving up cheese or burgers (organic of course) any time soon… she has taught me how to be more mindful about what food I eat and how to be kind to my body and the environment.  Her book is full of health food tips, recipes, and information about the importance of clean eating!

My go-to meal is ALWAYS Italian!  So any pasta recipe that can be made healthier– I’m down to try!  I got this recipe surfing on the kind diet website… and I LOVED IT…  it is called AVOCADO ALFREDO! Enjoy!


• 1 avocado
• Handful of basil
• 2-3 cloves of garlic
• Juice of 1/2 a lemon
• 1 tsp sea salt
• 1/2 tsp freshly ground black pepper
• 2 servings of cooked pasta (use Barilla PROTEIN pasta!)
• Garnish of lemon zest and black olives
