Breakfast of Champions!

Dear Diary,

I make it no secret that I love an Egg McMuffin. I’m an on the go kinda girl and I’m in my car a large portion of my day, so occasionally I’ll pull through the drive through, but only for what I knew as “healthy” options. However, even though Egg McMuffins are reasonably low in calories doesn’t mean that they’re good for you. They’re loaded in sodium, highly processed, from animals with shady pasts (sad face), and every ingredient is cooked in “liquid margarine” which includes over 15 ingredients. Gross. Thanks for crushing my dreams, McDonalds.

Because of this I’ve been getting more creative in the morning to create exciting options that are better for me. Here’s what’s happening in my kitchen.

*Lightly toast a whole wheat sandwich thin.

*Spread low-fat cream cheese on the toast.

*Layer sautéed spinach, a fried egg and smoked salmon on top.

If you want a little seasoning to spice it up, I’ve been using nutritional yeast lately. Say what? Nutritional yeast is a great substitute for cheese!

It’s vegetarian, gluten-free, salt-free, sugar-free, and sodium free! To sum it up, it’s a miracle seasoning!

Check out another fun spin on an open faced breakfast sandwich here!
