Chocolate Chia Pudding

Dear Diary,

I have a pretty great breakfast routine– it’s a meal I never like to miss.  Weekdays, it’s usually a green smoothie, and on weekends I crave avocados on toast, or some steel cut oatmeal.  But this Sunday morning, I decided to switch it up with a Chocolate Chia Pudding!  This recipe takes some preparation, but is very easy to do… it’s sweet, revs up your metabolism, and its the perfect excuse to have chocolate in the morning!

Chocolate Chia

The dish is great anytime, but it definitely is nutritious enough to be your starter meal of the day.  The chia seeds are the star of the show, they are superfood nutritious, and provide a terrific texture and thickness to the dish!  This recipe also has actually ZERO chocolate in it… yup, that’s right, ZERO.  Now don’t get me wrong… if you want to add some chocolate… I say go for it!  :)  But this way works great too! … and it’s definitely an even healthier way to go!

  • 2 cups of coconut milk
  • 1/2 cup of chia seeds
  • 1/2 scoop of chocolate protein powder (I prefer plant based protein)
  • 2 tbsp of cacao powder
  • 1 tsp of cayenne pepper
  • agave (2 squeezes)… add vanilla extract as well if you have it around :)  I didn’t and it still came out delicious! (1 tsp)

  • combine all ingredients in a sauce pan, and constantly stir until completely combined
  • continue to stir over medium heat until it has been boiling for a few minutes
  • then take off the heat, set in a bowl (or mason jar) to set… put in the fridge for at least one hour (or over night)
  • when cool… add a dollop of protein-filled greek yogurt and sprinkle organic raspberries on top!
  • And viola!  You’ve got a breakfast parfait like you’ve never had before!
