Chocolate Holiday Bark… with a healthy twist

Dear Diary,

What is holiday bark really?  Well I asked myself that same question this week.  Chocolate bark is known to be deliciously simple– but I never realized just how simple it was to make!  Usually holiday bark is made with white chocolate and peppermint– but I mixed it up for a healthier version that is perfect for snacking or gifting!

melt DARK CHOCOLATE or CACAO in a glass bowl over a pot of boiling water
add 2 tablespoons of vegetable oil for that glossy shine!

add one tablespoon of PEPPERMINT extract if you want that real Christmas flavor!

toast natural shredded coconut, oats, & almonds

add half of the mixture to the melted CHOCOLATE

pour the mixture on cookie sheet covered in parchment paper (non-stick surface)

sprinkle the remaining coconut, oats & almonds on top & add some cacao nibs and chopped candy cane for some more texture!

place in the fridge for at least 30 minutes to harden
