Dear Diary,

Cinco de Mayo is almost here! Woohoo! We’re getting excited to nosh on all our favorite Mexican recipes (healthy enchiladas anyone?!) and of course wash it down with our favorite – margaritas! This dip is actually a take on the classic 7 Layer Dip, but with a healthier twist! But I couldn’t actually call it a 7 Layer Dip, because I’ve added a couple extra ingredients… Oops. My bad. So I’m calling it the Healthy Fiesta Dip! 7 layer dip or not, this appetizer is goooood and you need it in your life! Especially with the festivities in store this week…

Who remember’s Lauren’s Fiesta Bachelorette last year?! This healthy bean dip would have been the perfect starter to kick off a fun meal with a fantastic group of girls!

 …here’s what you need…

Ingredients for a healthy 7 Layer dip, fiesta party dip

INGREDIENTS:

* 2 Cans of Black Beans, pureed

* 8 oz. Low-Fat Greek Yogurt

* 3 Organic Tomatoes, chopped

* 3 Organic Avocados, mashed

* 1 Bag Mini Sweet Peppers, finely chopped

* 1 Package Cheese, shredded (Mozzarella is healthiest)

* 3 Small Cans of Black Olives, pitted + sliced

* 1 Bunch of Green Onions, chopped (Optional Garnish)

* 2 Tsp. of Salt-Free Taco Seasoning (I used Mr. Dash)

* 2 Tbsp. Lime Juice

* Salt + Pepper (to taste)

* Healthy Baked Chip Option (I used Food Should Taste Good, Multigrain!)

DIRECTIONS:

1. Wash, rinse and chop all your ingredients so they are ready to go!

2. Puree the black beans until they look like creamy refried beans.

(They have the same texture and are so good, minus all the sodium!)

3. Spread a layer of pureed black beans on the bottom of your cup (I used personal cups for this one, but a Pyrex baking dish works well for groups too! Just maybe not as cute… :)

4. In a separate bowl, mash your avocados until they’re a lumpy, yet creamy consistency. Add in the lime juice and a dash of salt and pepper.

5. Add a layer of the mashed avocado mixture (or guacamole if you prefer), spreading out evenly to match the same height as the first layer.

6. Using another bowl, mix in taco seasoning with the Greek yogurt. Then, add that into the serving dish to match the other layers.

Mr. Dash Salt-Free Taco Seasoning with Low-Fat Greek yogurt makes for a healthier 7 Layer Dip. Lose the mayonnaise and sour cream! Check out the full recipe on Skinny Fat Girl Diary!

Make sure to use the salt-free package so you don’t over do it on your sodium intake.

7. Add a layer of chopped peppers and tomatoes.

8. Then, sprinkle a light layer of shredded cheese. Top off with olives and green onions as a garnish.

9. Add a chip or two into your personalized cup to get the dip started! And have a bowl of chips, veggies or whatever you want to dip in close by!
