Flat Belly Food – Homemade Kale Chips

 Dear Diary,

Living with my man-mate makes, “clean eating” nearly impossible. Trips to the grocery store, elicit requests of cheddar chips, ravioli, chocolate chip cookies and every other salty deliciously unhealthy food our local grocer offers. Having that shiaz in my house, coupled with my inability to manage my emotions, leads me to dapple in the, “dark,” side of snacking. I may have even licked my fingers yesterday, I can’t be sure, but I had to kick myself out of my own kitchen. Eating gets a little harder to manage after working twelve hour days on set. Just filmed 20 episodes for the History Channel, but more on that later!

So, if I’m to take this man to be my husband, I need to come up with some serious snack substitutes – enter kale chips. However, before you run off to Whole Foods to snag a bag, let me offer a more cost efficient way – make your own. I refuse to pay $6.99 for kale chips for two reasons 1. They flake anyway so you end up only being able to eat a 1/4 of the bag 2. There’s only 4 ounces per bag, $7! It’s just not right.

I just bought two huge bushels of kale for $3 and felt like doing a high kick for staying on my budget. Then all you need is olive and sea salt. I also sprinkle it with a little bit of lemon, not too much! Just a touch.

 Preheat your oven to 425 degrees, lay the kale leaves on a cookie sheet and sprinkle them with olive oil and sea salt.

I used about 3 teaspoons of olive oil with 6 huge leaves and 5 shakes of salt. Then just throw it in the oven! It’s that easy.

Bake them for 7-10 minutes, until crispy and you have your very own kale chips. The best part is, both my skin and stomach have had positive reactions to my new snack. My skin is brighter! Forget the $69 Glam Glow it’s all about what you eat! And as for my stomach, people say lentils are fibrous, try a bushel of kale – it will clear you out in now time…Awkward!  Seriously, as summer approaches arm yourself with this leafy green goodness.
