Dear Diary,

Lately, I have been traveling so much and it’s really been taking a toll on my health. Airplane snack boxes are the worst things for you, but they taste so good at 30,000 feet. Am I right? However, my skin has been looking lack luster due to my poor diet. So while I’m home for the next 4 days, I’m trying to cram fresh vegetables into all my meals, as much as, possible!! Nutritionist, trainers and doctors all alike praise the power of vegetables, especially green leafy vegetables. Packed with fiber, anti-oxidants and vitamins…spinach, kale and Swiss chard are just I need. Although, those Keebler Peanut Butter Crackers are still calling my name.

So apparently, greens are the first thing you should put in your body because they are high in fiber and have a lower glycemic index; kicking your metabolism into high gear and slowly raising your blood sugar level. However, the thought of eating just veggies the morning, doesn’t really work for me and who has time to make an omelet?! So, I’m heading to the Vitamix the next four morning and proving when veggies are in a shake… you can eat veggies anytime.

1/4 Medium Size Avocado

1 1/2 cups of loosely packed spinach or kale

6 oz.. – 8 oz. almond milk

1 scoop chocolate vegan protein

1 scoop of micro greens

1 tsp. cinnamon

1/4 cup of frozen berries

4 ice cubes

Blog green shake re-sized

Blend all the ingredients together in a Vita-mix, start with the ice cubes, milk and greens. Then add the rest of the ingredients. I’m feeling better already…If you are feeling sluggish, trust in this blended smoothie to kick things back in high gear.
