Hangover Recovery Dish After Shots With Clooney…Alright One Shot.

Oh how I’ve missed y’all!!!

I’ve been in Cabo San Lucas for the past week, without dependable Wi-Fi…it was like cooking without Pam – nearly impossible to survive. It was part work, part play and plenty of tequila.  I’ve mentioned before that I work for Casamigos Tequila - George Clooney, Rande Gerber and Mike Meldman’s Tequila. Cabo is actually where the brand started – Casamigos is the name of George and Rande’s Homes in Cabo. They wanted a house tequila, so spent a year making one. The finished product was so smooth, they ended up drinking over 450 cases with friends, so they decided to bring it the US. Lucky for us, now we have a spirit that’s as easy to drink as water, which could lead to trouble… I have several unidentified party injuries.

It was an amazing view from the Casamigo’s House

So, part of my trip to Cabo entailed a work event at none other than THE Casamiogs House….! Yes, I took a shot with my boss George Clooney, whose just as you’d expect – an affable, charismatic, funny guy. (sigh) The guys definitely know how to host a soiree. My fiancé also went down for a couple extra days of relaxation and fun… We tried this new water sport called flyboarding, you have to try it! You are literally propelled in the air by water – up to 40 feet, I only got to 12 ft. Don’t judge, it’s harder than it sounds! Needless to say, there has been a lot of tequila running through my veins the past 9 days.

                                 I know I’m not actually tough, considering I wore a wetsuit in Cabo water… I’m in on the joke :)

                                                                                           Strapping on the boots…

Then you fly..! K, that’s not us… but we only have video of us flying, but we aren’t that high.

Now that I’m back, it’s been a struggle to make it back to the gym! My body is void some serious nutrients! Apparently,  drinking doesn’t actually allow your body to absorb nutrients from food properly. This is one of the reasons you get drunk munchies(oh I know I’m not the only one) So, before I start my serious detox…I’m going to help my body recover with a boost of potassium and B vitamins I depleted with a simple, yet hearty dish of “Jazzed Up Yams.”

Here’s what you need

* 2 bananas

* 4 medium sized yams

* olive oil

Preheat your oven to 400 degrees, rub olive oil over the skin of the yams and place in the over for 20 minutes. After 20 minutes flip them  over and cook for an additional 20 minutes…40 minutes should be enough, but sometimes they require a little more time. They should be almost squishy and the skin should easily peel off.

Next place the bananas in the oven. These only take about 10 minutes to roast, so keep an eye on them – they will turn completely brown on the outside. When they are done, place both the peeled bananas and yams, in the Cuisinart or you can use an electric blender. Blend until the mixture is creamy and smooth. Place the mixture in a baking dish and place back in the oven at 350 degrees to heat it up – only take about 15 minutes to warm. Sprinkle the dish with sea salt and serve hot.  Enjoy this healthy way to treat your body to some much needed potassium and B6!

Cheers and Happy New Years!!!
