Valentine’s Day is almost upon us and I’m stressed, or maybe the right word is nervous. I always feel pressure to bring the, “sexy.” But sexy doesn’t feel natural to me. Last time I tried to strut my, Very Sexy, by Victoria’s Secret, I broke out in nervous hives. Benadryl and a cold shower, is really a mood killer, just sayin’.
Check out that face, awwwww duck lips! And it’s a tell tale sign I’m a mouth breather!! Argh…So my sexy is a work in progress…
This year I’m playing a different game, I’m going after my man’s taste buds. Oh I got this! What better way to say I love you, than breakfast in bed? My significant other loves sweet treats in the morning, but I’m not going to let things get out of hand. I’m making a healthier version of hotcakes with these raspberry oat pancakes. They have a great texture and I LOVE the color raspberries add, especially for the holiday!
Here’s what you need
- 1/4 cup Quick Oats
- 2/3 cup Buckwheat Pancake and Waffle Flour
- 1 tsp. Salt
- 1 tbsp. Cinnamon
- 1 Egg
- 2 tbsp. Canola Oil
- 1 ¼ cup Unsweetened Vanilla Almond Milk
- 1 tbsp. Light Agave Nectar
- ¼ cup Raspberries
Mix the dry ingredients (flour, oats, cinnamon, salt) together with a wooden spoon. Then beat the egg in a separate bowl. Next, add the egg and the rest of the ingredients to the dry mixture. Be careful not to over stir! You just want the lumps to disappear. Last, gently fold the raspberries or fruit of your choice into the batter.
Pre-heat your pan to medium heat and let the pancake making begin. It always takes me one or two cakes to perfect the art of flipping. But you can always eat the one’s that aren’t perfect. Serve with syrup or powdered sugar – YUM! I don’t put anything on my pancakes, but that’s just my neurotic self shining through.
I can’t stop at the pancakes, though… And I say it’s never too early for champagne…. on Valentine’s Day!
But the most important part is the card! Usually, I get sentimental, but this year I’m going to keep it light. Maybe slip in a boudoir photo for good fun. We are 50 days away from our wedding and are both overwhelmed by all the details (if I ask him one more question about lace, he might rip-cord out of our relationship)!! It takes A LOT of planning to orchestrate the big day.
The champagne is chilled, the card is written… now, all I need is a couple of Sweethearts on the plate to really make the magic happen!
