Homemade Skinny Granola- Perfect Holiday Gift

Dear Diary,

There’s nothing better than a home-made gift, especially after tweeting #broketillpayday :) It’s the thought that counts right? So this weekend, it’s my girlfriend’s housewarming party, so instead of the usual go-to of a bottle of wine. I decided to bring a little bit of my home to hers, with mom’s  granola recipe.

Now, anything that comes from Mama Gilmore, has warmth and  goodness in spades. When I was younger I remember coming home from school, and being greeted by mouth-watering aromas – the smell of fresh baked banana chocolate chip bread in particular; any bad day at school was immediately forgotten after a slice. This is probably one of the reasons, why I reach for a carbs in times of duress, but that’s neither here nor there.

So, my friend is not only getting a Gilmore family favorite, she’s also getting my recipe for putting your worries on hold. Let me tell you, a cup of golden crunchy goodness is the best remedy for a bad day or non-committal boyfriend…I’m just saying. However, in the spirit of my neurotic self- I’ve made a few modifications to make my granola as healthy as possible, as well as delectable.

Here’s all you need:

5 Cups of Oats

1/2 cup of Canola Oil

1/2 cup of  Agave

1 Cup of Almonds

1 Cup of Unsweetened Coconut

1/2 Cup Raw Pumpkin Seeds

1 Tablespoon of Cinnamon

Preheat the Oven to 325 degrees. Toss the Oats, Coconut and Almonds together in a large bowl. Whisk together the Agave and Canola together in a small bowl. Pour the liquid over the dry mixture, stir with a wooden spoon until all the oats are thoroughly coated. Spread the mixture onto a large baking sheet. Bake for 45 minutes, check periodically and stir with a spatula, until the mixture is golden brown. Let the granola cool. Then place it into a mason jar,  write the ingredients on a recipe card and attach to the jar with ribbon and tie with a bow.
