May 30th – “Chia Pet” seeds the new miracle food?

Dear Diary,

This weekend, I was in the land of designer sweatpants, aka Santa Barbara. It’s one of the most beautiful places in world, home to celebrities, and some of the healthiest people you’ll ever meet. It’s a place where the newest health trends are celebrated, and every time I’m there, I discover a new miracle food. This trip was no different. The food, however, was a seed, more specifically a Chia seed.

WTF?!  The very seeds we watered to create a Chia pet to place on our windowsills. Yes, that’s the seed I’m referring to. They come from the desert plant Salvia Hispanica and were a large part of the Aztec and Mayan diets in pre-Columbian times.  It was believed one tablespoon could satiate your hunger for 24 hours. However, in my own experiences this claim falls short.

So why are seeds that made grass porcupines possible, all the rage?? For starters they are super rich in omega-3 fatty acids, even more so than our beloved flax seeds!  Chia seeds are also rich in fiber, as well as calcium, iron, zinc and magnesium. You can throw a tablespoon in a protein shake or make them a delectable Chia Cereal.  When you add Chia seeds to water it creates a gel, which nutritionists say slow down the process of your body converting carbs into sugar, thus satiating your hunger for a longer period of time. (however not an entire 24 hour period)

Alright, so now that you’ve purchased these little seeds, that don’t look so miraculous, what do with them? Here is a great recipe and you can use it to replace your oatmeal in the morning.

CHIA BREAKFAST CEREAL  

                -1 1/3 CUP WATER

                -3 TABLESPOON

                -1 TEASPOON GRATED COCONUT

                -1 TABLESPOON CHOPPED WALNUTS

                -BANANAS OR BERRIES OR PEACHES

 

Bring the 1 and 1/3 cups of water to a boil add the Chia Seeds, cook till the seeds expand. Put in a serving dish dress with coconut, walnuts, and fruit. Enjoy! The white substannce on the top picture is coconut butter, you can throw some on if your body is craving some additional fat. (I know, the scariest word to many of us)
