Dear Diary,

One of my New Year’s Resolution is to become organized in both my life and food management. Life – meaning everything in my car, house and office – will have its own shelf or designated area. I will make necessary trips to, The Container Store, to purchase every tool to assist me in this quest. Though, I haven’t made one trip yet, I have high hopes for February…

Now when it comes to food, I’ve mentioned I’m always on the go. Sometimes, this lifestyle leads to, “convenient store living.” Packages of beef jerky and protein bars become both my breakfast and lunch. These are NOT the healthy food choices I strive to make, but when I’m in a bind I go for the jerky. So, I’m trying to become more prepared for my busy weeks – by prepping healthy snacks and meals. Of course, chopped vegetables are always a great option, but sometimes I need something with more flavor. My latest go to has become homemade protein bites. They are a satisfying snack on the go and have no preservatives!!  Simple, healthy and hearty eating, it doesn’t get any more SFG than that!

Here’s what you need:

-1 cup of old fashioned oaks uncooked

- ¾ cup of shredded coconut

- ½ cup honey or agave nectar

- 1 scoop of vanilla protein powder (roughly about ¼ cup)

       – ¾ cup almond butter

-1/4 cup of chocolate chips

- 1 tsp. of cinnamon

Mix all the ingredients together in a bowl and roll into small balls. Place the bites on a baking sheet lined with parchment paper. Recipe will make about 15 – 20 balls, place in the fridge for 30 minutes, then they are ready to eat! Try to not eat more than 2 to 3 at a time and keep the rest in the fridge. If you take them on the go and it’s hot out, make sure to put them in a cooler!! They last about 5 days.
