Dear Diary,

I love traveling and going to the airport in the morning, solely so I can guiltlessly order McDonald’s breakfast.  (Hey, it’s one of the only options…) Plus, their egg McMuffin sandwich is actually not that bad for you…(300 calories) But I’ve come up with an even healthier version with a fun twist!

“Egg in a Basket” with skinny buns!

STEPS:

1. Use a glass (aka wine glass) to core out the middle of the bread.

2. Lay your “holey” bread slice in the pan and crack an egg into the center of the hole. (This is alway fun!) Let it cook for a couple minutes.

3. Flip it over and cook the other side. (I like mine a little runny, so I don’t let mine cook for too long.)

4. Add your desired breakfast sandwich toppings (ie. cheese, turkey bacon, and maybe some steamed spinach for your health!)

5. Voila! You now have a low-carb breakfast sandwich (Especially if you eat it as an open-faced sandwich!)
