The Day I Became My Mother…

Dear Diary,

Today it officially happened…I became my mother. It’s not that I abhor the idea of turning into Mom Gilmore, just thought it would happen later down the line.  I was in the kitchen, making my morning tea, when I noticed bananas were taking over my fruit bowl. Minutes later, I’m elbow deep in flour, bananas and sugar. It wasn’t a conscious thought, my arms took over and I was on a banana bread mission. It was a major mom Gilmore move.  That woman is always baking: oatmeal cookies, flourless chocolate cake with raspberry chocolate sauce, and some sort of homemade bread.  She doesn’t keep it simple, though.  Look at this picture; she spent 4 hours making this German chocolate cake with a gooey caramel almond layer. It turned out just like the photo.

I caught the fever because my baking didn’t stop after buttery banana bread… I continued on making a treat with fewer calories. (It’s damn good banana bread though, see the recipe below) My treat of choice, chocolate cake. You are probably thinking, that has way more calories. However, it doesn’t! The trick is all in the Diet Coke.  It’s a signature Skinny Fat Girl Diary move and sounds completely outlandish, but it totally works…! You simply take a chocolate cake box mix and stir in a can of Diet Cola – that’s it!  It’s a great trick to both reduce the calories and enjoy some chocolate.

Here’s all you need:

1 Can of Sky Cola or a Diet Coke. I opted for Sky Cola with Zero Calories and Sweetened with Truvia. Is it still bad for you? Probably, but sometimes a girl has to do, what a girl has to do.

1 Can box of Chocolate Cake Mix

Simply pour the can of coke and mix with the cake mix. Follow the cooking instructions on the box. I had to cook it bit longer than instructed, but that could be my oven.

Mix until smooth…

Grease a 9-inch circular pan, and pour in the batter and bake…The finished product.

Then on to the guilt free taste test!

Really want to treat yourself…This is my favorite banana bread recipe…!

Here’s what you need:

* 3 or 4 ripe bananas

* ¼ cup of melted butter

*  1 cup of sugar

*  1 ½ cups of flour

* 1 egg

*1/4 teaspoon salt

*1 teaspoon of baking soda

1 cup of walnuts

Preheat the oven to 350 degrees. Grease a rectangular pan. Mash the bananas together.

Melt the butter in the microwave for about 30 seconds, then add to the mashed up bananas. Mix in the rest of the ingredients with a wooden spoon.SONY DSC

Pour the batter into a medium size loaf pan. 81/2″L X 41/2″W x 2 1/2″ H. Bake for about 55 to 60 minutes or until a tooth pick come out clean.

    Hey! So does the diet coke elimiate the need for 3 eggs, water and oil?? Can I try this trick with a Duncan Hines boxed chocolate cake?

    I’ve heard of this trick before, but now I’m curious to try it. :-)

    I would bake every day if I could. Granted, I’d end up giving a ton of it away (there are only 2 of us at home, and one of us is watching what he eats…jerk).
