The perfect pair for your skinny margarita… EDAMAME GUACAMOLE!


Dear Diary,

Living in Los Angeles… there is no shortage of Mexican food… you can find it anywhere… and luckily, being only a few hours away from the border, it’s always great… but I think my jeans could use a break from store bought tortilla chips and guacamole…

If I’m going to continue to shovel tons of chips and dip into my mouth every day– I better come up with a healthier and more budget pleasing alternative!

I decided to experiment by making edamame guacamole– it’s so simple, inexpensive and less than 40 calories!  It’s bold taste is fresh and healthy… and it only take 5 minutes!  Plus… it’s the perfect pair to my (and SFG Lauren’s) favorite drink… the margarita. :)  I even decided to make my own tortilla chips– baked not fried!  This was SO simple (who knew!)– and preservative free!

If I continue eating like this… it’s sure to be a delicious & healthy summer…

Edamame Guacamole–Blend together: shelled edamame, a couple cloves of garlic, olive oil, salt and pepper, lime juice, and pepper flakes for some nice heat!

Tortilla chips– Slice low carb tortillas into chip-size pieces, drizzle olive oil, sprinkle on some salt and pepper and cook in the oven on high heat for 5 minutes!
