There’s nothing like coming down from a vacation high, at least for me. Today, I’m returning from Kauai, Hawaii. After a week of choosing whether to go hiking, beaching or snorkeling, I’m now faced with the harsh reality of my work/life to-do list – it’s long, really long, like the length of Santa’s naughty or nice list. The silver lining, I feel refreshed enough from my trip to conquer that said list. We all need time to hit the reset button and this trip was much needed. My vacay reawakened my love of activities, working out and eating fresh clean food. True to form, I did also enjoy some adult beverages
Now that I’m back, I’m making it a priority to eat REAL food. I’m a Quest Bar, processed food junkie when things get stressful. This trip reminded that not only did I feel better eating real food, I actually look better. My eyes are brighter, my skin clearer and my stomach a little flatter…Not that that’s the main focus, but a flatter stomach is a fitness goal that I strive for and am constantly inspired by the many Insta-famous stomachs out there. Tonight, I’m kicking off my real food dinner with a bright, green and crunchy salad.
1 large head of Boston lettuce
1/4 cup sunflower seeds
2 tablespoons of dried cherries
2 slices of goat cheese (optional if you want to treat yourself)
2 slices of avocado
2 tablespoons of Olive Oil
1 ½ tablespoons of Champagne Vinegar
1 tablespoon of Teriyaki sauce
1 teaspoon of onion powder
Salt and pepper to taste
Prepare the dressing in a smaller mason jar. Add the ingredients together listed above in the directions, shake vigorously and salt and pepper to taste. Wash and prepare the lettuce. Place clean and dried lettuce in a large bowl. Slice the avocado and goat cheese, place in the salad. Next sprinkle in the dried cherries and sunflower seeds. Toss salad with the homemade dressing and serve immediately!
