Fancy food & healthy food don’t always go together but I decided to take on the challenge anyway.  With valentines day fast approaching I wanted to come up with a treat that would LOOK just as good as it TASTES!  It’s hard to make desserts healthy, but by sticking to simple ingredients, you know it’s going to be good for your body, soul & stomach…

FOR THE CRUST:

3 DATES

1.5 tbsp COCONUT OIL

1 tbsp vanilla extract

1 cup ALMONDS

use a food processor to mix ingredients together and then scoop into tart dish

place in freezer for an hour or so to harden…

FOR THE CHOCOLATE LAYER:

boil one cup of skim milk

once boiling, take off the heat and add a bag of chocolate chips (I prefer sunspire’s fair trade organic 42% cacao chips found at most supermarkets)

mix together until smooth and then pour into the tart dish

place the chocolate tart in the fridge to cool and then before eating add some berries on top!
